For the fruit:
5 medium firm apples, 2 tbsp brown sugar, 1 tbsp lemon juice, 1 tbsp cornstarch, 1 tsp ground cinnamon and a pinch of salt.
For the topping:
¾ cup old-fashioned rolled oats, ½ cup all-purpose flour, ½ cup chopped pecans, ⅓ cup packed brown sugar, 6 tbsp cold unsalted butter and ¼ tsp salt.
Prepare. Heat the oven to 350°F and butter a 10-inch oven-safe skillet or similar baking dish. Peel, core and slice apples about ¼ inch thick; toss with the fruit ingredients and spread in the pan.
Top and bake. Mix topping ingredients and rub or cut in butter to make loose crumbs. Scatter over apples. Bake 40–50 minutes, until apples yield to a knife, filling bubbles and topping is golden. Rest 15 minutes before serving.
