I was not expecting much the first time I saw someone swap rice and seaweed for cucumber. It felt like one of those ideas that looks good on a screen but leaves you wishing you had just made the real thing. Cucumber instead of sushi rice? It sounded light, sure, but maybe a little too light. Then I tried it on a warm afternoon, and it clicked.

These cucumber rolls are crisp, cool, and surprisingly satisfying. You take thin ribbons of fresh cucumber and wrap them around a simple filling like cream cheese and smoked salmon or even a bit of crab. No rice, no fuss, just clean flavors that come together in a way that feels fresh and a little addictive. What makes this one stick is the texture.   1. Slice the cucumbers lengthwise into thin strips. A vegetable peeler or mandoline works best to get long, even ribbons.
  2. Lay the cucumber strips flat on a clean surface, slightly overlapping them to form a base.
  3. Spread a thin layer of cream cheese across the cucumber, then add your smoked salmon or crab along one edge. Add avocado or bell pepper if you are using them.
  4. Carefully roll the cucumber into a tight log, starting from the filled edge.
  5. Slice into bite-sized pieces and arrange on a plate.
  6. Serve chilled with soy sauce or your favorite dipping sauce.
